Goji berries have been traditionally regarded as a longevity, strength-building, and sexual potency food of the highest order. <br /><br />This is what experts are saying... Goji berries are perhaps the most nutritionally-rich fruit on the planet. <br /><br />Goji berries contain amino acids (six times higher than bee pollen) and contain all 8 essential amino acids, up to 21 trace minerals (the main ones being zinc, iron, copper, calcium, germanium, selenium, and phosphorus), being the richest source of carotenoids, including beta-carotene (more beta carotene than carrots), of all known <br />foods or plants on earth! <br /><br />They contain 500 times the amount of vitamin C, by weight, than oranges making them second only to camu camu berries as the richest vitamin C source on earth.<br />Goji berries also contain vitamins B1, B2, B6, and vitamin E and the list goes on and on...<br /><br />Experts suggest a good daily intake of Goji berries is a small handful. <br /><br />Goji berries may be used as snacks or mixed with recipes or smoothies like other dried fruits.<br /><br />The Goji berry tastes more or less like a cross between a cranberry and a cherry.<br /><br />I like them with fresh squeezed orange juice or soya milk....<br /><br /><span style="font-weight:bold;">With Orange Juice:</span><br /><br />Squeeze 2-3 oranges and pour it in a blender, take a small handful of (raw dried goji berries) toss them in the blender with the orange juice and blend it for a few minutes until the berries are totally mixed into the juice.<br /><br /><br /><span style="font-weight:bold;">I also shake it with soya milk:</span><br /><br />Pour 8 oz of soya milk into a blender, add a riped banana and of course a small handful of goji berries.... again blend it till the berries are totally mixed into drink... and there you have it...<br /><br />Of course I try to use organic ingredients as much as i can... Tofu is extremely versitile and you can<br />make delicious meals with it.<br /><br />I like exchanging vegetarian recipes so here is a very simply tofu recipe<br />i picked up from my favourite collection of <a href="http://recipedotcom.com/recipes.php?group_id=26">vegetarian meals</a> <br /><br />Tofu Delight<br /><br />Ingredients<br /><br />1 Block of firm tofu (preferably organic)<br />1 tsp of chopped garlic<br />Soy Sauce<br />Olive Oil<br /><br />Cut tofu into 1 to 2" cubes. In a bowl mix the tofu cubes with<br />chopped garlic and soy sauce (to taste). Let the cubes soak in<br />the soya sauce for a couple of minutes. In the mean time heat up <br />the olive oil in a frying pan at medium heat (so garlic will toast not burn).<br />Throw in the soya cubes into frying pan let it fry for a couple of minutes,<br />until brown, stir so all sides get a nice golden brown color and voila.<br /><br />It is delicious and it goes well as a main dish with brown rice or is <br />perfect in salads! I choose to fill my body with all the elements of nutrition and to feed it simply an honestly with all foods<br />with that cannot smile back at me. <br /><br />I therefore, feel very successful in my transformation to being a vegetarian, it is at this vantage point i discovered the secret<br />to success in all things. Success to me is a state of mind, a choice i have made and the determination to learn the behaviours<br />necessary to achieve the results i'm going after. Therefore success is a journey, not a destination. It was in my later years I had this huge aversion to eat anything that have flesh like me.<br /><br />Eating meat was like looking in the mirror and taking a huge chomp on my face. It was on this day that I started on the slippery slope of my Vegetarian Quest.<br /><br />Everyone at home is a meat eater, and at breakfast , lunch and dinner I was forced to eat on a side table, and cook my own meals.<br /><br />Yep, everyone was waiting for me to return to the table, but watching my family gobbling down real flesh, stewed, cooked, burnt or charred was completely and totally gross. I had this picture of eating dead flesh in my mind that made me gag.<br /><br />So, I was forced to clean all my cutlery and dishes from meat contamination, and I had all my meals at a side table, so that I can eat in peace.<br /><br />The road to being a vegetarian is a tough and difficult battle, and the need to cook my own meals and eat alone was not easy. I was the mad outsider.<br /><br />Learning to adapt to this new lifestyle, created in me a vetarian chef, so if you are interested ...<br /><br />Here is my first recipe, <a href="http://recipedotcom.com/" target=new> it is delicious.</a><br /><strong>This unusual combination of vegetables and fruit makes a tasty accompaniment for special occasions.</strong><br /> 4 servings<br /> <h4>Ingredients</h4> 1 lb. carrots, peeled, cut into sticks<br />2 large white onions, thinly sliced into rings<br />5 Tbs. butter or margarine<br />3 large apples, cored, thinly sliced into rings<br />1 tsp. thyme (optional)<br />1/4 cup lemon juice<br />1 cup seasoned bread crumbs <h4>Directions</h4> Steam carrots in boiling salted water until tender-crisp. Set aside.<br /><br />Cook onions until golden in 2 tablespoons of the butter.<br /><br />In buttered baking dish, layer carrots, onions and apples. Sprinkle with thyme. Drizzle with lemon juice. Melt remaining butter. Mix in bread crumbs.
